June Monthly Meal Plan

It’s official… the kids are done with school! Now that summer is here, I really count on my monthly meal planning. This month we are away for a week, finally celebrating our 15 year anniversary in Mexico!! There is no better meal planning than having someone else cook for you for a week! For the rest of the weeks, I’ll be trying to plan meals that the kids can help with. They both enjoy cooking and I like to take the opportunity in the summer to teach them some new skills.

What about Breakfast and Lunch?

I don’t plan our breakfasts and lunches. Our children are 12 and 14 and are pretty independent with these meals. I just make sure we have basic supplies on hand so they can help themselves. In the summer I need to really keep some extra food on hand, especially for the 12-year-old; he is growing so fast and eats 5 meals a day!

Breakfast basics we keep on hand:

  • Eggs
  • Toast
  • Pancake mix
  • Oatmeal
  • Waffles
  • Fruit
  • Yogurts
  • Cottage Cheese
  • Cereals

Hot breakfast meals I like to make occasionally:

  • Baked Oatmeal
  • Scones
  • Banana Bread
  • French Toast (We love this pumpkin french toast too!)
  • Quiche

Lunch basics we keep on hand:

  • Lunchmeat
  • Cheeses
  • Lettuce and tomatoes
  • Bread and wraps
  • Tuna salad
  • Tortillas and cheese for quesadillas
  • Chicken Salad
  • Egg Salad
  • Raman (if you have teens you probably have Raman Noodles in your house)
  • Macaroni and Cheese
  • Cut Vegetables and dip
  • French fries or tater tots – the kids can cook in the airfryer.
  • Frozen Pizzas

June Meal Plan

Meatloaf – Using one of the meatloafs I put in the freezer last month.

Tacos (not salad – our son has been begging for “real tacos” instead of taco salad.

Eggroll in a Bowl

Creamy Crockpot Mexican Chicken, Recipe from Thrifty Frugal Mom.

A new fish taco recipe – I’m going to try a new taco recipe from my Taco Tuesday blog post.

Spaghetti with broccoli and garlic bread

Sheet pan fajitas – So easy – chicken strips, peppers, onions, and mushrooms on a sheet pan sprinkled with fajita seasoning!

Beef tips and noodles with veggies

Thai Red Curry with Chicken, recipe from AverieCooks.com – with rice and broccoli

Honey Glazed Chicken – Recipe from Simply Rebekah.

Pizza/movie Night (2 times)

Rotisserie Chicken (from Costco, of course!) with potatoes, roasted veggies and salad

Chicken legs on the grill with potato salad and coleslaw

Slow Cooker pulled Pork Sliders with coleslaw and french fries

Mississippi Chicken with noodles and veggies

Chicken Spring Rolls with Peanut Sauce. Peanut Sauce Recipe from The Toasted Pinenut

Lasagne (frozen from Costco!) with salad and garlic bread

Baked Potato Bar â€“ topped with beans, salsa, veggies and cheese.

Dining Out or Other meals:

  • 1 week in Mexico!! No cooking for me!
  • Dinner at in-laws house
