Freezer-Friendly Pumpkin Pie French Toast

You can double the batch and freeze the rest. To do so, just place the french toasts in a baking pan and into the freezer for around 1 hour. Once they are harder, store in an airtight container. To reheat just bake at 350 degrees for around 10 minutes. It’s a great hack around the holidays!

I love to serve this french toast with some pumpkin butter on top and a good drizzle of maple syrup.

Ingredients for Pumpkin Pie French Toast:

Thick bread slices – We love using Challah bread or Sara Lee Artesano bread both are soft and absorb the egg mixture really well.

Heavy cream – If you don’t have heavy cream you can use half and half or even whole milk, but I highly recommend the heavy cream. If you are using dairy-free milk, oat milk is my favorite option for this recipe.

Eggs – Fresh brown eggs are always best!

Pumpkin puree – Be absolutely sure that you’re not using pumpkin pie filling – that is not what you want. This is pure pumpkin puree with no sugar or spices added.

Pumpkin pie spice – If you don’t have this on hand it is so easy to make. See my instructions below:

Pumpkin Pie Spice Recipe

  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground ginger
  • a pinch of ground cloves

Vanilla extract – If you want to make this recipe even better use vanilla bean paste!

Butter – This is used for the fry pan, you can use a non-stick spray if you’d like but butter really does make everything better.

How do You Make Pumpkin Pie French Toast?

  1. In a bowl combine heavy cream, pumpkin pie spice, and vanilla. Once it is mixed well, add the pumpkin puree and eggs and mix until everything is well incorporated.
  2. Working in batches, melt butter in a large skillet over medium heat. Dip each bread slice into pumpkin mixture and let it soak in for at least 5 seconds. Be sure to flip your bread over and coat both sides.
  3. Transfer to skillet and cook for around 2 minutes per side.
  4. You can keep your cooked french toast in a covered dish in a warm oven as you continue to cook.
  5. Serve with maple syrup and butter. I love to add a sprinkle of cinnamon and toasted pecans and some fresh whip cream. Supplies Needed to make Pumpkin Pie French Toast

  • Mixing Bowl – I love these melamine bowls – they are so pretty and stack nicely. My old stainless steel bowls used to be so loud, these are nice because they don’t make a ruckus when I’m trying to make an early morning breakfast surprise for my kids.
  • A Good Fry Pan – I am in love with my All-Clad D3 fry pans. While it may be a bit pricy our lasted over 14 years and we even bring it traveling with us. I haven’t found a better pan. If you prefer a cast iron pan these are some of the best-rated ones out there!
  • Small Whisk – I love having a smaller sized whisk for recipes like this when my 11” whisk is just too big.
  • A Dish for Dipping French Toast – While this isn’t necessary, I do love having a rectangle dish for dipping my french toast so I don’t squish my bread when I’m dipping it.
