Freezer-Friendly Pumpkin Pie French Toast
You can double the batch and freeze the rest. To do so, just place the French toasts in a baking pan and into the freezer for around 1 hour. Once they are harder, store in an airtight container. To reheat just bake at 350 degrees for around 10 minutes. It’s a great hack around the holidays!
I love to serve this French toast with some pumpkin butter on top and a good drizzle of maple syrup.
Ingredients for Pumpkin Pie French Toast:
Thick bread slices – We love using Challah bread or Sara Lee Artesano bread both are soft and absorb the egg mixture really well.
Heavy cream – If you don’t have heavy cream you can use half and half or even whole milk, but I highly recommend the heavy cream. If you are using dairy-free milk, oat milk is my favorite option for this recipe.
Eggs – Fresh brown eggs are always best!
Pumpkin puree – Be absolutely sure that you’re not using pumpkin pie filling – that is not what you want. This is pure pumpkin puree with no sugar or spices added.
Pumpkin pie spice – If you don’t have this on hand it is so easy to make. See my instructions below:
Pumpkin Pie Spice Recipe
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ⅛ teaspoon ground ginger
- a pinch of ground cloves
Vanilla extract – If you want to make this recipe even better use vanilla bean paste!
Butter – This is used for the fry pan, you can use a non-stick spray if you’d like but butter really does make everything better.
How do You Make Pumpkin Pie French Toast?
- In a bowl combine heavy cream, pumpkin pie spice, and vanilla. Once it is mixed well, add the pumpkin puree and eggs and mix until everything is well incorporated.
- Working in batches, melt butter in a large skillet over medium heat. Dip each bread slice into pumpkin mixture and let it soak in for at least 5 seconds. Be sure to flip your bread over and coat both sides.
- Transfer to skillet and cook for around 2 minutes per side.
- You can keep your cooked french toast in a covered dish in a warm oven as you continue to cook.
- Serve with maple syrup and butter. I love to add a sprinkle of cinnamon and toasted pecans and some fresh whip cream. We love topping fall-flavored french toast with apple butter, if you’re looking for a simple recipe for apple butter you can make at home, check out Thrifty Frugal Mom’s recipe HERE.
Supplies Needed to make Pumpkin Pie French Toast
- Mixing Bowl – I love these melamine bowls – they are so pretty and stack nicely. My old stainless steel bowls used to be so loud, these are nice because they don’t make a ruckus when I’m trying to make an early morning breakfast surprise for my kids.
- A Good Fry Pan – I am in love with my All-Clad D3 fry pans. While it may be a bit pricy our lasted over 14 years and we even bring it traveling with us. I haven’t found a better pan. If you prefer a cast iron pan these are some of the best-rated ones out there!
- Small Whisk – I love having a smaller sized whisk for recipes like this when my 11” whisk is just too big.
- A Dish for Dipping French Toast – While this isn’t necessary, I do love having a rectangle dish for dipping my french toast so I don’t squish my bread when I’m dipping it.
