Blueberry Baked Oatmeal

This is a quick and easy recipe for baked oatmeal. The perfect recipe for a simple breakfast at home or an elegant brunch with friends. Add in blueberries or your favorite fruit or nuts to customize this recipe for your family.

Ingredients

  • 1 cup vegetable oil
  • 2 cups Sugar
  • 4 each Eggs
  • 6 cups Quick or Rolled Oats
  • 4 tsp. Baking Powder
  • 2 tsp. Salt
  • 2 cups Milk
  • 1 ½ cups Blueberries Fresh of Frozen

Instructions

  • Preheat the oven to 350°
  • In a medium bowl mix together the oil, sugar, and eggs.
  • Add in the oats, baking powder, and salt.
  • Once mostly blended, begin to mix to add in the milk and mix well.
  • Fold in your blueberries or other fruit or nuts.
  • Pour into a greased 9x13 dish.
  • Bake for 30 minutes or until lightly golden brown on top.
  • Serve hot or cold.
  • Top with milk or yogurt.

Notes

I typically cut the sugar in this recipe or use 1/2 sugar 1/2 maple syrup. You can always substitute a different fruit or add nuts, seeds, etc. Have fun and mix up ingredients in this recipe.
