Preparing for The Relevant Conference – Feeding the Family

Wow! This week – YES in just 3 days I’ll be heading out for The Relevant Conference… I’ll be packing up the van and driving FAR, FAR, AWAY …

to Harrisburg.

I’m thinking it’s a 40 minute drive, max! No exciting flight just a hop in the car and I’ll be there!

I’m sure many of you must be wondering, “How on earth Donna could be so excited to go to Harrisburg?”
Well, if you knew the wonderful ladies that I’ll be spending the weekend with you would be this excited too! Kat said it perfect in a recent interview: “It’s like summer camp for 30-somethings!” (Thanks Kat, so true!)

So while I’m  away for an entire 3 nights, my hubby will be back at home caring for our children. On top of that he will be “dog-sitting” his parents Golden Retriever, “Kobe.”I’m thinking he is going to have his hands full so I’m trying my best to prepare meals and snacks for them while I’m away. While I know that he is capable of cooking a meal I don’t want him to have to, I want him to be able to enjoy spending sometime with the kids and know that “dinner’s ready”.

So here’s their menu for while I’m away:

Thursday: I’ll put a roast in the Crockpot before I leave. Mashed Potatoes will be already made and ready to be warmed up. Veggies … well we’re sticking with “steam-able” veggies in the freezer. Dessert: Pumpkin Whoopie Pies or cookies

Friday: Lasagna, Garlic Bread and Salad. The lasagna is made and in the freezer already. Garlic bread will also be in the freezer and I’ll have the salad stuff cut up and ready.

Saturday: Chicken Kiev (in the freezer), baked potatoes in the fridge that will just need to be warmed up and once again, our faithful micro-steam veggies in the freezer.

I’m thinking about making some french toast and pancakes and popping them in the fridge to be warmed up for a yummy breakfast, but we’ll see if that happens. Tomorrow I’ll be busy whipping up goodies for them to enjoy while I’m away.I may be busy making some treats to share with my roomies too… yummy!

All of this may seem like overkill or too much but I’m hoping that this will take the pressure off of him while I’m gone… and maybe, just maybe I’ll come home to a clean kitchen… Maybe!

I have a feeling many of us Relevant Girls are going to come home to a very loving and appreciative husbands and families after 4 days away.

    I only work about 6-8 times a year, but I have to travel most of those times and my hubs is so good at holding down the fort while I’m gone that as long as we have groceries I am good to go. I am so spoiled.
    Your man will really appreciate all the prepared meals!

    I have a feeling you’re right about that last statement! I’ve never left my husband with our children for this long. I know he’s totally capable, but I’m willing to bet he’ll need a nice break by the time I get back and understand why I need one once in a while! LOL

    My trip to Relevant will be a little longer – about 6 hours, but I’ll have my best friend with me :). To prepare for the trip, I’ve been making casseroles for my husband and the kids… chicken tetrazzini, lasagna, etc… When I asked what he wanted for Saturday’s dinner, he said, “oh, don’t worry about Saturday. I’m taking the kids to the circus.” 🙂 Good luck with that, hon. 😉

    awesome! i soooo wanted to go to this. i just adore ann voskamp from holy experience, and she is speaking there! you’ll have to take notes on what she says and send them to me, oh, please, oh please???
