Cooking Day – What I learned
Right now I’m sitting in the recliner allowing my aching feet to have a well deserved rest.
Nearly 12 hours later I can say that
I LOVE ONCE-A-MONTH COOKING!
Here is what’s getting packed in the freezer:
Granola (2 huge batches)
Stuffed Pancake Cupcakes (30 ea / 5 breakfasts)
Taco Bake (4 meals)
Hamburger Soup (4 meals)
Beef and Lentil Stew (4 meals)
Chicken Ranch Pizza Topping (4 meals)
Beef and Veggie Casserole (4 meals)
Curried Chicken Tidbits (2 meals)
Black Bean Salsa Chicken (4 meals)
Tuna Noodle Casserole (4 meals)
Sloppy Joes (3 meals)
Beef Empanadas (2 meals)
That’s a total of 42 meals!!! WOW!
Tomorrow I’ll go over what it took to get this done and what I’ve learned. Be sure to check back.
Tonight I’ll be parked on the couch, taking it easy.

I made sure I purchased most of my supplies in bulk, I even stuck with generic products as much as possible to keep the cost down. My total for everything I needed was around $180.00. Not bad for 42 meals. That made each meal cost around $4.30! ** remember that I did have some of the supplies on hand (ie. milk, flours, butter, spices etc) also this amount could have (and should have) been split between 2 people.
