Fresh From the Garden – Zucchini Faux-Crab Cakes

Time for Zucchini!

Is anyone else becoming buried in their zucchini crops?  this year we were a bit wiser and only planted 3 plants, hoping it would be a more manageable amount of vegetables. So far, so good.
Today I am sharing with you one of our favorite recipes for zucchini.  If you like crab cakes then I hope you’ll enjoy these.

Zucchini Faux-Crab Cakes


  • 3 cups grated zucchini
  • 1/2 cup mayonnaise (or 1 egg, beaten)
  • 1 cup bread crumbs (more or less depending on consistency)
  • 1/4 cup minced onion
  • 1 teaspoon Old Bay Seasoning
  • 1/4 cup all-purpose flour or Japanese bread crumbs (Panko)
  • 1/2 cup vegetable oil for frying



In a large bowl, combine zucchini and mayo.


Add in bread crumbs, onion, and seasoning.


Mix well.  


Shape mixture into balls then flatten in to cakes.


Dredge in flour or panko bread crumbs.  


Add oil to your fry pan, once pan is hot, carefully fry cakes in oil until golden on both sides. 


Remove cakes and place on paper towels to drain any access oil.

We enjoy these just as they are or on hamburger buns.  They are also delicious made with greek seasoning instead of Old Bay and served on pita with Tzatziki sauce.

    Pinned this! Can’t wait to try it!! I also love chocolate cake made with zucchini – it is the moistest (most moist??) cake ever!!
